Dehydration vs Freeze-Drying: What Actually Changes

Two methods, two very different results. A practical guide to why our fruit slices are chewy and our banana powder is fine and light.

People use "dried" as a single word, but the two processes behind it produce almost opposite products. Understanding the difference explains why our apple rings are chewy and our banana powder is a fine, pale dust.

Low-temperature dehydration

Warm air is moved across sliced fruit over 8 to 14 hours, pulling moisture out gradually. We hold temperatures at 45–55°C — low enough to protect heat-sensitive vitamin C and the volatile aromatic compounds that make fruit smell like itself.

The fruit shrinks and its sugars concentrate. The result is dense, chewy and intensely flavoured. This is the method behind every slice we sell — apple, lemon, orange, pineapple and banana.

Freeze-drying

The fruit is frozen solid, then placed under vacuum. The ice converts straight from solid to vapour without ever becoming liquid — sublimation. Because water never moves through the fruit as a liquid, the cell walls are not dragged inward, and the structure stays where it was.

  • Retains roughly 95% of original nutrients versus 60–75% for heat drying
  • Produces a light, crystalline, shatter-crisp texture before milling
  • Takes 24–36 hours and far more energy, which is why it costs more
  • Grinds into a fine, pale, true-to-fruit powder

Why our banana powder is freeze-dried

Heat-dried banana mills into a dull, slightly caramelised powder — the sugars have already begun to brown. Freeze-dried banana mills into something much closer to fresh: a pale gold, faintly sweet powder that hasn't cooked at all.

That colour is not decoration. It is a direct visual signal that the delicate aromatics survived the process intact, which is why it stirs into a smoothie tasting like actual banana rather than banana-flavoured filler.
